Colorful Pepper and Zucchini Saute

Serves 6

Ingredients:

  • 3 tablespoons olive oil

  • 2 small leeks, sliced (white and light green parts only)

  • 1 orange bell pepper, seeded, cut into strips

  • 1 red bell pepper, seeded, cut into strips

  • Salt and freshly ground black pepper

  • 2 zucchini, ends trimmed, diced

  • 2 cloves garlic, minced

  • 1 tablespoon minced fresh tarragon

  • 1 tablespoon minced fresh parsley

  • 1 tablespoon fresh thyme leaves


Directions:

  1. Heat oil in a large skillet over medium heat.

  2. Add leeks and peppers. Season with salt and pepper. Cook, stirring often, until vegetables soften.

  3. Add zucchini and continue to cook, stirring often, until zucchini softens.

  4. Add garlic and herbs. Cook, stirring, for 1 minute.

  5. Serve hot.
