Layered Bean Dip

Serves 12

Ingredients:

  • 1 (16-ounce) can refried black beans

  • 1 (8-ounce) container guacamole

  • 1 cup vegan sour cream plus more for garnish, if desired

  • 1 cup salsa

  • 1-1/2 cups shredded vegan cheese

  • 1 cup cherry tomatoes, each halved

  • 1 cup shredded lettuce

  • 1 cup pitted black olives, sliced


Directions:

  1. Spray an 8-inch square baking or serving dish with cooking spray.

  2. Spread beans on the bottom of the dish and continue to layer up with guacamole, sour cream, salsa, and cheese.

  3. Top with tomatoes, lettuce and black olives.  Cover and refrigerate or serve immediately.
