Cinnamon Quinoa with Fruit

Serves 4

Ingredients:

  • 1-1/4 cups quinoa

  • 1-1/4 cups water

  • 1-1/4 cups coconut milk (shake can well before opening) plus more for drizzling

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves

  • A few grates of nutmeg

  • Generous pinch of salt

  • Fresh raspberries

  • Banana slices


Directions:

  1. Combine quinoa, water, coconut milk, spices, and salt in a large pot over high heat.

  2. Bring to a boil, stirring occasionally. Reduce heat to low, cover, and simmer for 12 minutes or until most of the liquid is absorbed.

  3. Divide among 4 bowls and drizzle with additional coconut milk.

  4. Serve hot topped with raspberries and bananas.
