Ingredients:

  • 3/4 cup granulated sugar

  • 3 tablespoons cornstarch

  • Generous pinch of salt

  • 4 cups of frozen unsweetened pitted cherries, thawed

  • 1 (17-ounce) package puff pastry, thawed

Directions:

  1. Preheat oven to 425 degrees F.

  2. In a medium pan, stir together sugar, cornstarch, and salt.

  3. Add cherries and any juice and stir together. Bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 10 minutes.

  4. Roll out puff pastry and cut each sheet of pastry into 4 squares.

  5. Mound cherry mixture on half of each square and fold corners over to form a triangle. Use the back of a fork to seal the edges.

  6. Place pies on a baking sheet and use a sharp knife to cut slits in the top of each pie.

  7. Bake 15 minutes or until puff pastry is puffed, crisp, and golden.
