Kale and Blood Orange Salad

Serves 4

Ingredients:

  • 2 tablespoons agave

  • 1 tablespoon lemon juice

  • 1 tablespoon white miso

  • 5 tablespoons grapeseed oil

  • 1 bunch kale, woody stems and veins removed, leaves torn

  • 2 large carrots, shredded

  • 4 blood oranges, peeled, segmented

  • 1 cup slivered almonds, toasted


Directions:

  1. In a large bowl, whisk together agave, lemon juice, miso, and grapeseed oil.

  2. Add kale, carrots, and oranges, tossing to coat.

  3. Divide salad among 4 plates and garnish with almonds. Serve immediately.
