Kale and Blood Orange Salad
Serves 4
Ingredients:
2 tablespoons agave
1 tablespoon lemon juice
1 tablespoon white miso
5 tablespoons grapeseed oil
1 bunch kale, woody stems and veins removed, leaves torn
2 large carrots, shredded
4 blood oranges, peeled, segmented
1 cup slivered almonds, toasted
Directions:
In a large bowl, whisk together agave, lemon juice, miso, and grapeseed oil.
Add kale, carrots, and oranges, tossing to coat.
Divide salad among 4 plates and garnish with almonds. Serve immediately.
