Slow Cooker Apple Crisp

Serves 8

Ingredients:

  • 8 to 10 medium apples, cored, sliced

  • Zest and juice of 1 orange

  • 1/2 cup granulated sugar

  • 3 teaspoons ground cinnamon, divided

  • 1 cup rolled oats

  • 1 cup all purpose flour

  • 1/2 cup firmly packed brown sugar

  • 1/2 cup chopped walnuts

  • 1/2 teaspoon salt

  • 1 teaspoon ground cloves

  • 1 teaspoon ground ginger

  • 1/2 teaspoon freshly grated nutmeg

  • 1/2 cup vegan butter, chilled, in pieces

Directions:

  1. Place apples, orange zest, juice, sugar and 1 teaspoon cinnamon in a large slow cooker. Toss ingredients to coat.

  2. In a small bowl, mix together remaining cinnamon, oats, flour, brown sugar, walnuts, salt, cloves, ginger, and nutmeg.

  3. Spread flour mixture over apple mixture and use your fingers to move top layer of apples around to allow dry ingredients to be both on top and down in between some of the apples.

  4. Dot the top of the mixture with butter pieces.

  5. Cover slow cooker and cook on HIGH for 4 to 6 hours.

  6. Serve with dairy-free whipped cream or vegan ice cream.
