Apple Butter Grilled Cheese Sandwich

Makes 1

Ingredients:

  • 2 slices whole grain bread

  • 2 tablespoons storebought or homemade apple butter

  • 1/4 cup Daiya Mozzarella Shreds

  • 2 tablespoons vegan butter, melted

Directions:

  1. Heat a skillet to medium.

  2. Slather one side of each slice of bread with apple butter.

  3. Sprinkle cheese on the apple buttered side of one slice of bread. Top with remaining slice of bread, apple buttered side down to make a sandwich.

  4. Brush both sides of the sandwich with melted butter. Spray the skillet with cooking spray.

  5. Place sandwich in the skillet and cover (this will help melt the cheese). Cook for 2 to 3 minutes or until lightly browned.

  6. Flip sandwich and continue to cook, covered, until cheese is melted and both sides of the sandwich are lightly browned.
