Black Bean Salad

Serves 4

Ingredients:

  • 2 cups canned black beans, drained and rinsed

  • 2 avocados, halved, pitted, peeled, diced

  • 2 plum tomatoes, diced

  • 1 bunch of scallions, chopped

  • 2 tablespoons finely chopped fresh cilantro

  • 1 medium red onion, diced

  • 5 ounces Italian dressing of your choice

  • Tortilla chips for serving


Directions:

  1. In a large bowl, toss together all ingredients except the tortilla chips.

  2. Serve immediately with tortilla chips alongside.
