Caramelized Onion and Mushroom Soup

Serves 6

Ingredients:

  • 1/4 cup olive oil, divided

  • 2 large onions, halved, sliced

  • 1 pound sliced mushrooms

  • Salt and freshly ground black pepper

  • 2 tablespoons flour

  • 1 tablespoon minced fresh rosemary

  • 1 tablespoon minced fresh thyme

  • 1/4 cup red wine

  • 4 cups vegetable broth

  • 1 bay leaf

  • Croutons or crusty bread


Directions:

  1. Preheat oven to 425 degrees F.

  2. In a large bowl, toss together oil, mushrooms, and onions. Season with salt and pepper.

  3. Spread on a baking sheet. Roast, stirring occasionally, for 20 minutes or until lightly browned.

  4. Heat remaining oil in a large pot over medium heat. Add onion and mushrooms.

  5. Sprinkle with flour and stir to coat. Season with rosemary and thyme.

  6. Stir in wine, broth, and bay leaf. Bring to a boil. Reduce heat and simmer for 15 minutes.

  7. Remove bay leaf. Season with salt and pepper.

  8. Serve with croutons or bread.
