Rosti Potato Cakes

Serves 6

Ingredients:

  • 2 pounds Yukon gold potatoes, peeled, quartered

  • 1/2 cup finely chopped onion

  • 1/4 cup finely chopped fresh herbs of your choice (optional)

  • 1 teaspoon salt

  • 1/4 cup olive oil

  • Freshly ground black pepper


Directions:

  1. Using the shredding disk of the food processor, shred potatoes.

  2. Transfer potatoes to a large bowl and add onion, herbs, and salt, tossing to combine.

  3. In a large skillet over medium-high heat, heat oil. Form shredded potatoes into patties. Season with pepper.

  4. Cook rosti in skillet for 3 to 4 minutes per side or until lightly browned.

  5. Transfer to a serving platter along with your choice of accompaniments.
