Orzo with Shiitake Mushrooms

Ingredients:

  • 1 pound orzo

  • 1 pound shiitake mushrooms (remove stems and cut into quarters)

  • 1 large Spanish onion, thinly sliced

  • 4 ounces olive oil

  • 2 teaspoons kosher salt

  • 1 teaspoon black pepper

  • 48 ounces vegetable broth

  • 2 teaspoons chopped fresh rosemary

  • 2 teaspoons chopped fresh thyme

  • 2 teaspoons tomato paste

  • 4 ounces crushed tomatoes


Directions:

  1. Pour oil in a pan over medium heat.

  2. Cook onions and mushrooms for about 10 minutes.

  3. Add broth, rosemary, thyme, tomato paste, and tomatoes.

  4. Cook, stirring often, for 15 to 20 minutes.

  5. Serve hot.
