Broccoli Rabe with Raisins

Serves 4

Ingredients:

  • 1 pound broccoli rabe, coarsely chopped

  • 2 tablespoons olive oil

  • Pinch of crushed red pepper

  • 3 garlic cloves, very thinly sliced

  • 1/2 cup raisins

  • 1/4 cup finely chopped almonds

  • Salt and freshly ground black pepper


Directions:

  1. Cook broccoli rabe in a large pot of salted boiling water for 2 to 3 minutes.

  2. Drain and transfer to a bowl of iced water. Drain again and pat dry.

  3. Heat oil in a large skillet over medium heat. Add red pepper and garlic. Cook, stirring often, for 1 minute or until fragrant but not so long that you burn the garlic.

  4. Add broccoli rabe and raisins to skillet. Cook, stirring often, for 2 minutes.

  5. Season with salt pepper. Serve garnished with chopped almonds.
