Sauteed Kale with Pine Nuts and Cranberries

Serves 6

Ingredients:

  • 2/3 cup pine nuts

  • 2 tablespoons olive oil

  • 6 cups coarsely chopped kale leaves

  • Salt and freshly ground black pepper

  • 1 cup dried cranberries


Directions:

  1. Place pine nuts in a small dry skillet over medium-high heat. Toast, shaking skillet often, until pine nuts are light golden. Immediately remove from heat to avoid scorching them.

  2. Heat oil in a large skillet over medium heat. Add kale and toss to coat with oil. Season with salt and pepper. Cover skillet and cook for 2 minutes.

  3. Remove cover and cook, stirring often, until kale is wilted.

  4. Add pine nuts and cranberries, tossing to combine.

  5. Serve immediately.
