Vegan Brown Rice Pilau

Vegan Brown Rice Pilau

Serves 6

Ingredients:

  • 1/4 cup olive oil

  • 8 ounces sliced mushrooms

  • 1/2 cup wild rice, soaked in water overnight

  • 1 cup long-grain brown rice

  • 3-1/2 cups vegetable broth

  • 1/4 cup dried blueberries

  • 1/4 cup dried cranberries

  • 1/4 cup dried apricots, diced

  • 1/4 cup sliced almonds

  • 1/4 cup sliced green onions

  • Salt and freshly ground black pepper


Directions:

  1. In a medium saucepan over low heat, heat oil.

  2. Add mushrooms and cook, stirring often, until mushrooms are softened and lightly browned.

  3. Add rices and broth, stirring to combine. Bring to a boil over high heat.

  4. Lower heat, cover pan, and simmer for 45 minutes or until liquid is absorbed.

  5. Add dried fruit, almonds, and green onions. Season with salt and pepper.
