Holiday Rum Balls

Yields 32

Ingredients:

  • 2 cups gingersnap cookie crumbs

  • 1-1/2 cups pecans

  • 1 cup confectioners' sugar

  • Generous pinch of ground ginger

  • Generous pinch of salt

  • 2 tablespoons maple syrup

  • 1/3 cup rum

  • 1 cup finely shredded coconut


Directions:

  1. Place 2 cups of the cookie crumbs in a large bowl.

  2. Finely grind pecans in a food processor. Add them to the bowl.

  3. Add sugar, ginger, and salt, stirring to combine. Stir in syrup and rum.

  4. Refrigerate for 30 minutes.

  5. Spread coconut in a shallow bowl.

  6. Using a tablespoon, scoop out spoonfuls of the rum mixture and shape into 1-inch balls.

  7. Roll the balls in the coconut. Place balls on a silicone-lined baking sheet.

  8. Refrigerate until firm, about 1 hour.

  9. Store in an airtight container in the refrigerator for up to 2 weeks.
