Basic Gluten-Free Flour Mix

Cookbook author Cybele Pascal is a working mom with a food-allergic family. Instead of letting an allergy-free lifestyle defeat her, she has risen up to deliciously take on the challenge. She has mastered allergy-free cooking and shares her yummy 30-minute meals in her cookbook Allergy-Free and Easy Cooking. Though her cookbook is free of gluten, wheat, eggs, soy, peanuts, tree nuts, shellfish, and sesame, it isn't a vegan-only book. However, Pascal offers a vegan recipe section and there are vegan-friendly recipes peppered throughout the book. One of the most common questions for people with a gluten allergy is, "What can I substitute for regular flour?" Pascal answers with her own gluten-free flour mix.

Basic Gluten-Free Flour Mix

Recipe featured in Allergy-Free and Easy Cooking by Cybele Pascal.

Yields 6 cups

Ingredients:

  • 4 cups superfine brown rice flour

  • 1-1/2 cups potato starch

  • 2/3 cup tapioca flour


Directions:

  1. Combine all ingredients in a large gallon-sized bag, zip to seal, and shake until well blended.

  2. Store flour in the refrigerator until ready to use.


Note: Pascal uses this flour for her homemade gnocchi, one of our favorite recipes in her cookbook.
