When your sandwich enthusiasm falls flat, turn to a food pro to kick up your lunch experience. Bryan Voltaggio of Top Chef fame has teamed up with the Grain Foods Foundation to celebrate the 250th anniversary of the best thing since sliced bread -- the sandwich! Chef Voltaggio was so inspired by his young son's love of sandwiches, he opened up a restaurant dedicated to the common lunch eat. Chef Voltaggio's Avocado CLT celebrates the deliciousness and healthy gourmet appeal of a vegetarian sandwich.

The Avocado CLT

Makes 6 sandwiches

Ingredients:

  • 12 slices whole wheat bread, toasted

  • 3 avocados, peeled, pitted, and sliced

  • 3 European cucumbers, peeled and sliced thin

  • 1 Romaine heart, finely chopped

  • 2 heirloom tomatoes, sliced

  • 1/2 cup Green Goddess Spread

  • 1/2 cup Goat Cheese Mousse

  • 1 teaspoon extra virgin olive oil

  • Sea salt and freshly ground pepper, to taste


Directions:

  1. Lay out two slices of whole wheat toast on a cutting board.

  2. Coat the first slice of bread evenly with the Green Goddess Spread. Set aside.

  3. Spread the second slice of bread evenly with the Goat Cheese Mousse, then layer with cucumber slices. Season lightly with salt, pepper and olive oil.

  4. Next, add the romaine and tomato on top of the cucumber. Again, season lightly with salt, pepper and olive oil.

  5. Then, add slices of avocado and top with the slice of toast with the Green Goddess Spread.

  6. Stabilize with two wooden skewers and cut in half to serve.
