Christmas Snowball Cookies

Yields 2-1/2 dozen

Ingredients:

  • 1/2 cup vegan butter

  • 1/3 cup powdered sugar plus more for rolling

  • 1 teaspoon finely grated lemon zest

  • 1 teaspoon pure vanilla extract

  • 1 cup plus 2 tablespoons cake flour

  • 1/2 cup finely chopped sliced almonds

  • Finely shredded coconut


Directions:

  1. In the bowl of a standup mixer fitted with the paddle attachment, beat butter and sugar until creamy.

  2. Beat in lemon zest and vanilla. Stir in almonds.

  3. Place bowl in the refrigerator for 1 hour or until easy to handle.

  4. Preheat oven to 350 degrees F. and line 2 baking sheets with parchment paper.

  5. Shape dough into 1-inch balls. Bake for 15 minutes or until lightly browned.

  6. Roll warm cookies in powdered sugar and coconut. Set each cookie in a paper cup to serve.
