Asian Noodles with Veggies and Sesame Seeds

Serves 4

Ingredients:

  • 8 ounces linguini, soba noodles, or other noodles of your choice

  • 2 tablespoons coconut oil

  • 2 carrots, quartered, cut into sticks

  • 1 red bell pepper, seeded, cut into strips

  • 1/2 pound snow peas

  • 1/2 cup shelled edamame

  • 4 green onions, sliced (green and white parts)

  • Salt and freshly ground black pepper to taste

  • A San-J Asian cooking sauce of your choice

  • 3 tablespoons sesame seeds

  • Fresh cilantro for garnish


Directions:

  1. Cook noodles in a large pot of salted boiling water according to package directions.

  2. Meanwhile, heat oil in a large skillet over medium-high heat. Add carrots and pepper. Cook, stirring often, until carrots are crisp-tender.

  3. Add snow peas, edamame, and green onions. Cook stirring often until snow peas are heated through. Season with salt and pepper. Turn heat to low.

  4. Drain noodles and return to the pot. Drizzle with a little of the sauce, tossing to coat. Add vegetable mixture and toss to coat.

  5. Divide among 4 plates and sprinkle with sesame seeds and cilantro. Serve hot.
