Vegan Nut and Seed Brittle

Nut brittles are not only a sweet salty delicious treat to eat, but they are also ideal for packaging up in cute little gift bags to give to your loved ones during the holidays. This brittle is made with almonds, peanuts and sunflower seeds, but you can swap in any nuts and seeds you have on hand.

Vegan Nut and Seed Brittle

Ingredients:

  • 1 cup corn syrup

  • 1/2 cup water

  • 2 cups granulated sugar

  • 2 cups peanuts

  • 2 cups almonds

  • 1 cup sunflower seeds

  • 1-1/2 teaspoons salt

  • 1 teaspoon pure vanilla extract

  • 1-1/2 tablespoons vegan butter

  • 3/4 teaspoon baking soda


Directions:

  1. Coat a large rimmed baking sheet with cooking spray. Set aside.

  2. Place corn syrup and water in a medium pan over medium-high heat. After it warms up, but before it begins to boil, stir in the sugar. Bring to a boil, stirring occasionally with a wooden spoon.

  3. Insert a candy thermometer into the mixture. When the temperature reaches 250 degrees F., stir in the peanuts, almonds, sunflower seeds and salt. Bring the mixture back to a boil.

  4. Continue to cook, stirring often, until the temperature reaches 290 to 300 degrees F. Quickly remove the pan from the heat and stir in vanilla and butter, stirring until butter has melted.

  5. Sprinkle in baking soda and stir to combine. Beware, the mixture will begin to foam and double in volume.

  6. Immediately pour the hot mixture onto the prepared baking sheet, and use a spatula to spread mixture out, evenly distributing the nuts and seeds.

  7. Set aside for at least 2 hours to cool completely. Use your hands to bread it apart into pieces.
