Holiday Brussels Sprouts

Serves 8

Ingredients:

  • 3 tablespoons vegan butter

  • 8 ounces shallots, diced

  • Salt and freshly ground black pepper

  • 2 tablespoons cider vinegar

  • 1 tablespoon sugar

  • 1-1/2 Brussels sprouts, trimmed, halved

  • 3 tablespoons olive oil

  • 1 cup water


Directions:

  1. Melt 3 tablespoons butter in a medium skillet over medium heat.

  2. Add shallots and cook, stirring often, until shallots are softened. Season with salt and pepper. Continue to cook, stirring often, until shallots start to lightly brown.

  3. Add vinegar and sugar. Cook, stirring often, until shallots are browned. Set aside.

  4. In a large skillet over medium heat, cook Brussels sprouts in olive oil, stirring often, for 5 minutes. Season with salt and pepper. Continue to cook, stirring often, until sprouts are lightly browned.

  5. Add the water to sprouts. Cook, stirring often, until sprouts are tender.

  6. Add shallot mixture to sprouts and stir to combine. Season with salt and pepper. Serve warm.
