The perfect holiday vegetable platter

Sure, piling cut vegetables on a platter is one way to serve your holiday guests a starter to tide them over until the feast begins. But with just a little more time, you can create a gorgeous colorful platter of vegetables that will keep your hungry guests busy while you finish up prep for the meal.

The perfect holiday vegetable platter

Serve vegetable platter along with your favorite vegan dips.

Ingredients:

• 2 red bell peppers, seeded, sliced


• 2 green bell peppers, seeded, sliced


• 6 tomatoes (red and/or yellow), cut into wedges


• 1 bunch of green onions, trimmed


• 6 radishes, thinly sliced


• Small cucumber, halved lengthwise, seeded, cut into batons


• Handful of red grapes


• A variety of fresh herbs


• Handful of pine nuts

Directions:

1. Arrange bell pepper slices, alternating colors, around the edge of a large platter.


2. Arrange tomato wedges in a circle around the inside of the bell pepper slices.


3. Set green onions in the center. Fan radish slices around onions.


4. Top with grapes, fresh herbs, and pine nuts. Serve.
