No Bake Banana Cream Pie

Serves 8

Crust:

  • 1 cup pitted dates

  • 2 cup raw almonds

  • 1 teaspoon pure vanilla extract (optional)

  • 2 tablespoons agave nectar or maple syrup


Filling:

  • 8 to 10 frozen bananas


Optional toppings:

  • Sliced fresh bananas

  • Vegan chocolate sauce

  • Vegan caramel syrup

  • Shredded toasted coconut


Directions:

  1. Process the dates in a food processor. Slowly add almonds until a fine consistency is reached.

  2. Add vanilla, agave nectar or maple syrup. Press mixture into a 9-inch pie pan.

  3. Process the bananas through Omega Juicer using the blank screen or process in a food processor. You want the consistency to be VERY thick and creamy, like thick frozen yogurt or soft serve ice cream.

  4. Spread banana mixture over crust. Top with topping of your choice and freeze until ready to serve.
