No Bake Banana Cream Pie
Serves 8
Crust:
- 1 cup pitted dates
- 2 cup raw almonds
- 1 teaspoon pure vanilla extract (optional)
- 2 tablespoons agave nectar or maple syrup
Filling:
Optional toppings:
- Sliced fresh bananas
- Vegan chocolate sauce
- Vegan caramel syrup
- Shredded toasted coconut
Directions:
- Process the dates in a food processor. Slowly add almonds until a fine consistency is reached.
- Add vanilla, agave nectar or maple syrup. Press mixture into a 9-inch pie pan.
- Process the bananas through Omega Juicer using the blank screen or process in a food processor. You want the consistency to be VERY thick and creamy, like thick frozen yogurt or soft serve ice cream.
- Spread banana mixture over crust. Top with topping of your choice and freeze until ready to serve.
