Super Fast Holiday Salad

Whether your potatoes took too long to cook or you simply got caught up in other holiday recipes, you forgot to make a salad and you certainly don't have time to make the one you had planned. No worries! This super fast salad can be tossed together in minutes -- and it will still have impressive holiday appeal. Just make sure you have the ingredients on hand before the big feast day arrives.

Super Fast Holiday Salad

Serves 8

Ingredients:

• 10 cups mixed greens


• 8 ounces sun-dried tomatoes packed in oil, drained, coarsely chopped


• 2 cups shredded carrots


• 1 cup pine nuts


• 2 cups croutons


• Your favorite salad dressing


• Salt and freshly ground black pepper

Directions:

1. Toss all ingredients except dressing in a very large bowl.


2. Drizzle with dressing and season with salt and pepper.


3. Toss salad again and divide among salad plates.


4. Drizzle with a little more dressing and set the dressing on the table for guests to help themselves.
