Homemade vegan tortillas

There is nothing better than adding your favorite fillings into a homemade tortilla, especially if it is vegan!

Vegan flour tortillas recipe

Yields 12-16

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/3 cup vegetable oil
  • 1 cup hot water

Directions:

  1. In a large bowl, whisk together the flours, salt and baking powder.
  2. Add oil, and mix until the mixture looks like fine crumbs.
  3. Pour in the hot water and mix until a dough-ball forms.
  4. Cover the bowl with plastic wrap and set aside for 30 minutes.
  5. Divide the dough into balls. On a lightly floured surface, use a rolling pin to roll each ball into a thin, flat circle.
  6. Heat a skillet or griddle to medium-high heat. Cook each tortilla for 2 minutes on each side or until brown blisters form.
  7. Serve immediately or let cool completely and store in an airtight container for up to 4 days.
