Vegan Athenian Salad

Serves 6

Ingredients:

  • 3 cups cooked Rice Select Texmati Brown Rice, warm

  • 1/3 cup oil packed dried tomatoes, drained and chopped

  • 1 cup thinly sliced green onions

  • 1/2 cup sliced pitted Kalamata olives

  • 1 cup vegan  feta-style cheese

  • 1/4 cup vegan Caesar salad dressing

  • Salt and freshly ground black pepper

  • Romaine lettuce leaves

  • Chopped walnuts


Directions:

  1. Combine rice, tomatoes, onions, olives and feta in a bowl.

  2. Drizzle dressing over rice mixture and season with salt and pepper. Toss again.

  3. Line bowls or plates with lettuce leaves and mound rice on top of lettuce. Serve immediately garnished with walnuts.
