Pumpkin Gnocchi

Serves 4

Ingredients:

Directions:

  1. Cook gnocchi in a large pot of boiling salted water for 3 to 4 minutes or until gnocchi float.

  2. Meanwhile, heat tomato sauce in a large skillet.

  3. Drain gnocchi and transfer to skillet, stirring to coat with sauce.

  4. Divide among four serving plates or bowls. Sprinkle with parsley and wheat germ. Serve hot.
