Herb Baked Butternut Squash

Herb Baked Butternut Squash

Serves 4

Ingredients:

  • 2 medium butternut squash, halved lengthwise, seeded

  • 6 tablespoons olive oil

  • 1/4 cup finely chopped herbs of your choice

  • Salt and freshly ground black pepper to taste


Directions:

  1. Preheat oven to 375 degrees F.

  2. Place butternut squash halves on a large baking sheet or oven-safe baking pan cut-side up.

  3. In a small bowl, whisk together olive oil and herbs.

  4. Add a generous pinch of salt and pepper.

  5. Brush herb oil all over the flesh of the butternut squash. Season squash with salt and pepper.

  6. Bake for 35 minutes or until squash is fork tender. Serve warm.
