Spinach Raisin Walnut Crepes

Serves 8

Ingredients:

  • 2 tablespoons olive oil

  • 1/2 cup finely chopped onion

  • Salt and freshly ground black pepper

  • 1 clove garlic, minced

  • 1/2 cup dry white wine

  • 8 cups baby spinach leaves

  • 1 tablespoon fresh thyme leaves

  • 1 cup raisins

  • 1 cup coarsely chopped walnuts

  • 8 vegan crepes, warmed

  • Your favorite vegan cheese


Directions:

  1. Heat oil in a large skillet over medium heat.

  2. Add onion and season with salt and pepper. Cook, stirring often, until onion is softened.

  3. Add garlic and cook, stirring, for 1 minute.

  4. Pour in wine, stirring to combine. Add spinach, stirring to combine. Place a lid on the skillet and cook for 1 to 2 minutes.

  5. Uncover skillet and continue to cook spinach, stirring often, until it is wilted.

  6. Remove from heat and stir in the thyme, raisins, and walnuts. Season with salt and pepper.

  7. Fill crepes with spinach filling and cheese. Serve immediately.
