Oat-Rageous Fruit Squares

Yields 2 dozen

Ingredients:

  • 2 cups quick-cooking oats

  • 1-3/4 cups all-purpose flour

  • 3/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1 cup granulated sugar

  • 1 cup vegan butter, softened

  • 1/2 cup chopped walnuts

  • 2 to 3 cups fresh fruit (sliced plums, peaches, or other stonefruit, berries, cherries, or diced apples)


Directions:

  1. Preheat oven to 400 degrees F. and grease a 13x9-inch baking dish.

  2. In a large bowl, stir together oats, flour, salt, baking soda, and sugar.

  3. Add butter to flour mixture and use your fingers to rub butter into the mixture until large crumbs form.

  4. Reserve about 2 cups of the oat mixture and set aside.

  5. Press the remaining mixture into prepared baking dish. Spread fruit overtop.

  6. Sprinkle evenly with reserved oat mixture.

  7. Bake for 25 to 30 minutes or until golden.

  8. Cool on a wire rack for 30 minutes.

  9. Cut into squares and serve warm or allow to cool completely and wrap each square in plastic wrap.

  10. Store squares in the refrigerator for up to 1 week.
