Tangy Swiss Chard

Serves 4

Ingredients:

  • 1 pound Swiss chard

  • 1 onion, sliced

  • 1 tablespoon red wine vinegar

  • 1 tablespoon Dijon mustard

  • 1/4 teaspoon garlic powder

  • 1/8 teaspoon black pepper

  • 1 tablespoon olive oil


Directions:

  1. Separate the stems and leaves from the Swiss chard. Slice the stems into thin strips and roughly chop the leaves.

  2. Spray a large nonstick saucepan with cooking spray.

  3. Over medium heat, sauté the stems and onion for 10 minutes or until tender.

  4. Stir in the leaves and remaining ingredients and cook for 5 minutes or until tender.

  5. Serve immediately.
