Roasted Grape Chutney

Roasted Grape Chutney

Makes 1-1/3 cups

Ingredients:

  • 1 cup seedless red grapes, each cut in half

  • 1 cup seedless green grapes, each cut in half

  • 1 tablespoon lemon-infused olive oil

  • 1 tablespoon red wine vinegar

  • 1 tablespoon minced fresh parsley

  • Salt and freshly ground black pepper to taste


Directions:

  1. Preheat oven to 425 degrees F. and spray a large rimmed baking sheet with cooking spray.

  2. In a medium bowl, combine all ingredients, tossing to coat with olive oil and vinegar.

  3. Spread grape mixture on the prepared baking sheet.

  4. Roast for 20 minutes or until grapes begin to shrivel. Remove pan from the oven and let chutney cool sligthly before serving.

  5. Store cooled chutney in an airtight container in the refrigerator for up to 3 days.
