Green Tomato Salsa

If your tomatoes haven't turned the rosy red you were hoping for by now, pluck the green fruits off the vine and make this tasty green tomato salsa. 

Green Tomato Salsa

Makes 2-1/2 cups

Ingredients:

• 2 cups chopped, seeded green tomatoes


• 1 large jalapeno, seeded, finely chopped


• 1/4 cup finely chopped red onion


• 1/4 cup finely chopped fresh cilantro


• Zest and juice of 1 lime


• Salt and freshly ground black pepper to taste

Directions:

1. Combine all ingredients in a bowl.


2. Serve immediately or cover and keep refrigerated for up to 1 week.
