Green Tomato Salsa

Makes 2-1/2 cups

Ingredients:

  • 2 cups chopped, seeded green tomatoes

  • 1 large jalapeno, seeded, finely chopped

  • 1/4 cup finely chopped red onion

  • 1/4 cup finely chopped fresh cilantro

  • Zest and juice of 1 lime

  • Salt and freshly ground black pepper to taste


Directions:

  1. Combine all ingredients in a bowl.

  2. Serve immediately or cover and keep refrigerated for up to 1 week.
