How to make vanilla extract

Make your own vanilla extract -- all you need is vanilla beans, vodka, and a jar.

I've made flavored vinegars, infused oils, seasoned salts, and gourmet sugar, but I hadn't ever thought about making my own vanilla extract until my friend Rachel of Raia's Recipes showed me her own large jar of fragrant, rich-colored vanilla extract. Homemade is always better -- and all you need to make vanilla extract at home is vodka, vanilla beans, and a jar.

Vanilla Extract

Makes 16 ounces

Ingredients:

  • 3 vanilla beans

  • 16 ounces vegan-friendly vodka


Directions:

  1. Use a sharp knife to cut vanilla beans lengthwise to expose seeds but keep the beans intact.

  2. Put vanilla beans in a glass jar or divide them into smaller bottles (they make great gifts!).

  3. Cover beans with vodka, seal, and shake. Place jar or bottles in a dark, cool place for at least 1 month, shaking occasionally.
