Mocha Almond Cookies

Makes 2-1/2 dozen

Ingredients:

  • 3 cups blanched almond flour

  • 1/3 cup cocoa powder

  • 2-2/3 tablespoons finely ground coffee

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2/3 cup coconut oil, warmed

  • 2/3 cup agave nectar

  • 1 teaspoon pure vanilla extract

  • 1 teaspoon pure almond extract

  • 1 cup chopped dark chocolate


Directions:

  1. Preheat oven to 350 degrees F. and line 2 baking sheets with parchment paper.

  2. In a large bowl, whisk together almond flour, cocoa powder, ground coffee, baking soda and salt.

  3. In a small bowl, whisk together coconut oil, agave and vanilla

  4. Pour coconut oil mixture into flour mixutre and stir until moistened.

  5. Stir in dark chocolate.

  6. Drop dough by heaping tablespoonfuls onto a parchment lined baking sheet

  7. Bake for 8 minutes, rotating sheets after 4 minutes.

  8. Cool on baking sheets for 5 minutes then serve warm.
