Radicchio Spinach Salad with Sesame Seed Vinaigrette

Serves 6

Ingredients:

  • 1 medium head radicchio, cored, leaves separated and torn

  • 5 ounces fresh baby spinach

  • 1/2 red onion, thinly sliced

  • 2 tablespoons tahini (the thinner varieties work best)

  • 3 tablespoons olive oil

  • 2 tablespoons rice wine vinegar

  • 1 tablespoon minced fresh chives

  • 3 tablespoons sesame seeds

  • Salt and freshly ground black pepper to taste


Directions:

  1. In a large bowl, mix together radicchio, spinach, and onion.

  2. In a small bowl, whisk together tahini, oil, vinegar, and chives.

  3. Pour half of the vinaigrette over salad and toss to coat. Add more vinaigrette if desired.

  4. Add sesame seeds and toss again. Serve immediately.
