Veggie Tortilla Wraps

Serves 4

Ingredients:

  •  4 whole wheat flour tortillas

  • 1/3 cup vegan mayonnaise

  • 8 large lettuce leaves

  • 1 large red bell pepper, seeded, cut into strips

  • 2 ripe but firm avocados, halved, pitted, peeled, sliced

  • 1/2 small red onion, sliced


Directions:

  1. Lay tortillas on a flat surface and spread with mayonnaise.

  2. Line tortillas with lettuce leaves.

  3. Evenly divide pepper, avocado, and onion among tortillas.

  4. Wrap up each tortilla burrito-style. Slice in half crosswise.

  5. Serve immediately.
