Tahini Greens Sandwich

Serves 2

Ingredients:

  • 4 slices whole grain seeded bread, toasted

  • 3 heaping tablespoons Rhubarb Hibiscus Jam or your favorite preserves

  • 3 to 4 tablespoons tahini

  • Generous handful of fresh herbs and baby spinach or tender chard or kale


Directions:

  1. Slather two pieces of toast with jam then slather the remaining two pieces of toast with tahini.

  2. Scatter greens over the 2 pieces of toast with jam then set the remaining pieces of toast on top.

  3. Cut each sandwich in half and serve.
