Spicy Papaya Jicama Salad

Serves 4

Ingredients:

  • 1 papaya, halved, seeds removed, peeled, diced

  • 1 small jicama, peeled, diced

  • 2 teaspoons finely grated lime zest

  • Juice of 1 lime

  • 2 tablespoons olive oil

  • 1 to 2 teaspoons chili-infused olive oil (try Calivirgin Serrano Olive Oil)

  • Pinch of salt

  • 4 cups fresh spinach

  • Paprika for dusting


Directions:

  1. In a large bowl, toss together papaya, jicama, lime zest, lime juice, olive oils, and salt.

  2. Line 4 plates or bowls with spinach and top with papaya mixture. Dust with paprika and serve.
