Tricolor Cauliflower Curry

Recipe adapted from Raw Food Detox (Skyhorse Publishing, May 2012) by Ulrika Davidsson.

Serves 4

Ingredients:

  • 1/2 white cauliflower, cut into small florets

  • 1/3 purple cauliflower, cut into small florets*

  • 1/3 green cauliflower, cut into small florets*

  • 1 onion, finely chopped

  • 1 garlic clove, minced

  • 1 tablespoon grated fresh ginger

  • 1 tablespoon canola oil

  • 1 (14.5-ounce) can coconut milk

  • 1 tablespoon red curry paste

  • 1 tablespoon agave (the original recipe calls for honey)

  • Juice of 1 lime

  • Salt and white pepper to taste

  • 1/2 cup cashews

  • 1 head lettuce, torn


Directions:

  1. Place cauliflower together in a medium bowl.

  2. In a large skillet, saute the onion, garlic, and ginger in the oil over medium heat for a couple of minutes.

  3. Add coconut milk, curry, agave, lime juice, salt and white pepper, and bring to a simmer. Simmer for 5 minutes.

  4. Add cauliflower and continue cooking for a few minutes more.

  5. Roast cashews in a dry skillet over medium heat until toasted.

  6. Line the bottom of 4 dinner plates with lettuce.

  7. Divide the cauliflower mixture among the dinner plates and top with roasted nuts. Serve immediately.

Editor's note: Davidsson's Raw Food Detox recipes may not be viewed as "raw" by raw purists, but I actually find her recipes intriguing because I'm not into cleanses and detox diets that advocate juicing-only regimes or advocate meal plans that a busy mom with a hungry family will find excruciatingly challenging (where's the fun in that?).
