Vegetarian friendly: Cool Lime Pie

One of our favorite recipes from Frozen Delights is the cool lime ice cream pie. Refreshing, zesty, and a yummy change from the usual scoop of ice cream  in a bowl. This recipe is an orginal from Good Housekeeping.

Serves 10

Ingredients:

  • 5 limes

  • 1 (14-ounce) can fat-free sweetened condensed milk

  • 1 pint vanilla ice cream, softened

  • 1 (6-ounce) ready-to-use graham cracker crust

  • 1/2 cup heavy or whipping cream

  • Lime peel slivers for garnish

Directions:

  1. From limes, finely grate 4 teaspoons peel and squeeze 2/3 cup juice.

  2. In a large bowl, whisk together condensed milk, lime zest, and lime juice until blended.

  3. Whisk ice cream into condensed milk mixture until evenly blended.

  4. Pour ice cream mixture into crust.

  5. Freeze at least 6 hours or until firm. If not serving the pie the same day, wrap and freeze up to 1 week.

  6. To serve, let pie stand at room temperature to soften slightly, about 10 minutes.

  7. Meanwhile, in a small bowl, with mixer at medium speed, beat cream until stiff peaks form.

  8. Top each serving of pie with a dollop of whipped cream and sprinkle with lime slivers.
