Guacamole in an Avocado Bowl

Serves 8

Ingredients:

  • 4 medium to large ripe avocados, halved crosswise, pit removed

  • 2 tomatoes, seeded, chopped

  • 1 tablespoon lime zest

  • Juice of 2 limes

  • Pinch of salt

  • Pinch of sugar

  • A few grinds black pepper

  • 1/3 cup finely chopped fresh cilantro

Directions:

  1. Run a sharp knife around the flesh and peel of each avocado half, leaving 1/8-inch flesh against the peel. Score the flesh, taking care not to cut through the avocado peel. Use a spoon to remove avocado chunks and transfer to a large bowl.

  2. Add remaining ingredients and mix until combined, keeping avocado chunky.

  3. Press avocado halves, bottom side down, firmly on a flat surface to flatten the bottoms so they stand up.

  4. Fill with guacamole and serve.
