Oatmeal Breakfast Cookies

These oatmeal breakfast cookies are a great grab-and-go option for the days you don't have time to sit down to eat.

Oatmeal Breakfast Cookies

Yields 8

Ingredients:

  • 1-1/2 cups quick cooking oats

  • 1/4 cup finely chopped almonds

  • 1/4 cup ground flax

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/4 cup finely chopped dates

  • 1/3 cup soy yogurt

  • 2 tablespoons coconut oil, warmed

  • 2 tablespoons maple syrup


Directions:

  1. Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.

  2. In a large bowl, stir together oats, almonds, flax, baking soda, and salt.

  3. Add dates and use your hands to evenly distribute them through oat mixture.

  4. In a small bowl, whisk together yogurt, coconut oil, and maple syrup.

  5. Add yogurt mixture to oat mixture and stir to form a dough.

  6. Place 1/4-cupful measures of dough onto the prepared baking sheet. Pat the dough into round cookies.

  7. Bake for 15 to 18 minutes or until the cookies are golden.

  8. Cool on the baking sheet for 5 minutes then transfer cookies to a wire rack to cool completely.

  9. Store cookies in an airtight container in the refrigerator or freezer.

  10. To heat, place in the toaster or microwave.
