Apricot Pecan Rice

Serves 6

Ingredients:

  • 1/2 cup pecans, coarsely chopped

  • 1 cup basmati rice

  • 2 cups water

  • 1/2 teaspoon sea salt

  • 1/2 cup chopped dried apricots

  • 1 tablespoon grated orange zest

  • 1/2 teaspoon ground cinnamon


Directions:

  1. Place pecans in a dry skillet over medium-high heat. Cook, shaking the skillet occasionally, for a few minutes or until pecans are just toasted. Do not scorch. Immediately remove from heat and set aside.

  2. Meanwhile, in a medium saucepan, combine rice, water, and salt. Bring to a boil, cover, reduce heat to low and simmer until water is absorbed.

  3. Stir in pecans, apricots, orange zest, and cinnamon. Serve hot.
