Spring Pitas

Makes 2

Ingredients:

  • 1 small, ripe but firm avocado, halved, pitted, peeled, sliced

  • Pinch of sea salt

  • A few grinds black pepper

  • 2 whole wheat pita pockets

  • 1/2 cup cherry tomatoes, each tomato halved

  • 1/2 small cucumber, thinly sliced

  • Small handful of fresh herbs

  • Small bunch of sprouts


Directions:

  1. Mash avocado with salt and pepper. Spread on the inside of each pita pocket.

  2. Stuff pitas with remaining ingredients. Serve immediately.
