Crunchy Radish and Cucumber Salad

Serves 4

Ingredients:

  • 1 bunch radishes, trimmed, thinly sliced

  • 1 cucumber, ends trimmed, thinly sliced crosswise

  • 2 ripe Roma tomatoes, sliced crosswise

  • 1 cup sliced mushrooms

  • 6 cups micro greens or spring mix

  •  Your favorite vegan-friendly creamy dressing

  • 2 tablespoons minced fresh parsley

  • Salt and freshly ground black pepper


Directions:

  1. In a large bowl, mix together radishes, cucumber, tomatoes, mushrooms, and greens.

  2. Divide salad among 4 salad bowls. Drizzle with dressing. Season with parsley, salt and pepper.
