Vegan Blue Cornmeal Pancakes

Ingredients:

  • 1-1/2 cups white whole wheat flour

  • 1/2 cup Bob's Red Mill Blue Cornmeal

  • Pinch salt

  • 1 tablespoon granulated sugar

  • 1 tablespoon baking powder

  • 2 tablespoons ground flax

  • 1-1/2 to 2 cups soymilk

  • 2 tablespoons vegan butter, melted (plus more for serving)

  • 1 cup fresh blueberries, plus more for garnish

  • 2 to 3 bananas, peeled and sliced

  • Maple syrup to taste


Directions:

  1. Preheat a nonstick griddle to medium-high. Preheat the oven to 200 degrees F.

  2. In a large bowl, whisk together flour, cornmeal, salt, sugar, baking powder, and flax.

  3. Add 1-1/2 cups of the soymilk and 2 tablespoons butter to the flour mixture and mix until just combined. Add more milk if the mixture seems too thick. You want a pourable consistency. 

  4. Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Immediately drop a few blueberries on top of each pancake.

  5. Cook for 1 to 2 minutes or until the bottom is light golden brown. Flip and continue cooking until the second side is brown.

  6. Transfer to a baking sheet and place in the oven to keep warm until ready to serve.

  7. Serve with extra butter, banana slices, and maple syrup.
