Pecan Cranberry Grits

Serves 4

Ingredients:

  • 4 cups water

  • 1 teaspoon salt

  • 1 cup stone-ground cornmeal (dry grits)

  • 1/2 cup dried cranberries

  • 3 tablespoons vegan butter

  • 1/2 cup coarsely chopped pecans

  • Freshly ground black pepper to taste


Directions:

  1. In a medium saucepan over high heat, bring water to a boil.

  2. Whisk in cornmeal. Reduce heat to medium-low and cook, stirring occasionally, for 15 minutes or until mixture is thick.

  3. Stir in cranberries and butter, continuing to stir until butter is melted.

  4. Remove from heat and stir in pecans. Season with salt and pepper. Serve immediately.
