Easy Green Linguini

Simple and satisfying, this is one of my favorite vegan pasta dishes, featuring toothsome linguini, shredded linguini, and pesto. Serve as a vegan dinner or side dish.

Years (and years) ago, when I would come home from college or my mom would visit me, she would make me pasta tossed with shredded zucchini and pesto. Simple and satisfying, this is one of my favorite pasta dishes.

Easy Green Linguini

Serves 4

Ingredients:

  • 8 ounces linguini

  • 2 zucchini, shredded

  • 1/2 cup homemade vegan pesto, more or less to taste

  • Pinch of red pepper flakes

  • 1/4 cup vegan sour cream (optional)

  • Salt and freshly ground black pepper


Directions:

  1. Cook pasta in a large pot of salted boiling water according to package directions. Drain and transfer to a large bowl.

  2. Add remaining ingredients, tossing well to coat. Serve hot.
