Cinnamon Apple Couscous

Serves 6

Ingredients:

  • 2 cups apple juice

  • 1 apple, cored, diced

  • 1/4 cup dried currants

  • 1 ground cinnamon

  • 1 cup whole wheat couscous


Directions:

  1. In a medium pan over medium-high heat, combine apple juice, apple, currants, and cinnamon in a saucepan. Bring to a boil.

  2. Stir in couscous, cover, and remove pan from heat. Let stand 5 minutes.

  3. Fluff with a fork and serve hot.
